For some reasons you're right, but when you search for any services there's a filter button for "Online Sellers",  buyer might looking for those seller who's online at that time and want quick delivery.

For some reasons its good to stay online as much as possible and i completely agree with you that this will not guarantee more sales.

Buyers can hire you whether you are online or not. I can also tell you that, just because you are signed in, does not mean that you will be available in the online sellers category. More often than not, buyers are not going to see you among the sellers who are signed in.

Please focus on learning to be a great seller, not sitting around waiting for things to randomly happen to you.
