Custom Offer in GBP (£)

Can anyone help me figure out how to change the currency when creating a custom offer? 

I'm based in the UK and the only currency available (seemingly by default) on the custom offer templates are in $

Till now, there is no option to do that. You need to do it in USD until Fiverr have an option for that.
