What do you mean, demand for which gigs? basically everything.

Best to offer things that you are really good in of course.

The gigs most in demand would probably be the worst place to start since you would have a LOT of competition. Choose something you are good at as others have said. Just read the Terms of Service and try some gigs. I also recommend the Fiverr Academy.
