Progress payments per page of typing job

Hi, I want to establish a contract as a seller in which I have to convert scanned pages into Word365 format. The contract is supposed to continue but I need to bill and get paid after the completion of each individual assignment along with the mid-contract feedback from the client related to my work. Can someone please guide me regarding establishing such a type of contract? Thank you!
