NO , There is no problem with updating your gig image even it boosts your ranking if image are best and eye catching compare to the previous one. and also fine some good keyword and use it .Best of luck.

You have to practice patience. 

If you optimize your gig. promote your gig. provide better service to customer. Your gig will rank. Your gig description & title should be unique and AI free.

Your potential customers are clicking on your gigs and seeing AI created images instead of a portfolio.  

Without a portfolio you're unable to showcase your work, and customers will not trust you. 

Simple as that really.
