Subcategories can be changed but not parent/main category. For that, you will have to delete the gig to create a new gig with the right main category

Gig Titles: It can be changed but the URL of the gig will remain the same like the original gig title which was set initially. 

You can change both subcategories and gig titles but it will rank or not that's up to the performance of your gig and niche as well. If it's in saturated niche, then you can understand it.
