Trusting Sellers with Confidential Information

I am new to Fiverr and am about to embark on a contract with a seller. They require login access to both my website and Quickbooks account. 

How do I know whether I can trust them with this confidential information? Is there a policy (I did a cursory check but couldn't find one) I can reference?

There's the Terms of Service https://www.fiverr.com/legal-portal/legal-terms/terms-of-service

that says:

Any exchange of personal information required for the completion of a service must be provided in the Order Page. Sellers further confirm that whatever information they receive from the Buyer, which is not public domain, shall not be used for any purpose whatsoever other than for the delivery of the work to the Buyer. Any users who engage and communicate off of Fiverr will not be protected by our Terms of Service.

You could try a seller with a higher level who sounds credible or a Pro seller and check their profile & gig description fully.

I am in the same predicament. Hesitant to start work with a new project. I reviewed all of my web server information and have protected the web server in one case, but the terms of service on Fiverr are weak and seemingly unenforceable across the globe. Besides, by the time you discover something it may be too late. In your case you know you can set up multiple users on QB and grant only certain rights to the "new" user. Many basic level web hosting policies don't allow for multiple logins.
