Obviously, you can do it, but it's not to be good for a profile. I personally suggest you create multiple gigs through various category service areas.

Yes, You can create multiple gigs in 1 category or skill. But you should remember,

Title, Tags, Description must be different. So you can have more buyers who is searching with the new tags.

Would you do this to increase impressions? I don't see any other reason. It's possible to do what you want but it's not very ethical.
