If people contact you while you are asleep and you manually reply when you wake up then that is what counts in your response stat. The auto reply doesn't count against or for you in terms of stats.

Yes. Do mention in your profile description that you're running an agency with a team of professionals, though, or potential buyers might think that you're one person offering gigs in multiple disciplines and probably not really good at anything.

1. Optimize Your Gig Title and Description using low-competition keywords and choose niches
2. Stay Active and Promote Your Gig on social media and other platforms to get orders from new clients
3. Monitor Analytics: You should check impressions and clicks daily.
