How can be sure once paid that work will be done?

You don't pay the customer, you pay Fiverr initially. Only when you're satisfied that the work has been completed do you accept the order and the freelancer is paid.

So it's simple, if you haven't had what you ordered, don't accept the delivery.

The seller get paid only after you are satisfied and accept the delivery. If you are not satisfied with the work, you can request revisions on the work. If you are still unsatisfied, you have the option to cancel the order and get refund.

Payement is in transit, sellers never get paid until they finish the job that you decide to mark it as completed if satisfied, you don't have to worry about it because you can refuse or accept.
