If I pay a musician from Fiverr to play parts for a song I have written, can I release the finished song and make money from it without them being able to claim anything?

It's very unlikely (but I thought I'd check), but if a musician from Fiverr played on my song and then my song somehow went to number 1 in the charts, would they own any rights to any money I make and be able to sue me for anything? Or would I own the guitar part because I paid for them to play it?

You need to check it with the seller that you’ll choose. Everyone has different terms. 
But as per fiverr TOS you own copyrights unless stated otherwise in sellers gig description, his gig extra etc. 

But it might be different terms for commercial right with every seller
