I have delivered my work to the client and he is offline which’s why can’t accept my order. Will it ruin my on-time delivery rate?

Nope the order will be accepted after 3 days and since you delivered it shouldn’t affect your stats. But is the buyer refusing to accept or are they not online to accept?
