I think you need to offer another service.
Personally, your services is already out of date?
You only offer easy service where regular people can do this themselves.
One of the biggest point for succesful gigs is being unique, if not, you will compete with thousand similar seller.

another tips:
You gigs description is not convincing, just sound like a fresh seller.
Profesional Seller will add FAQS sections.
For example: What if the PDF have complex layout, did buyer can edit the .word files easily with your output?
Did you use automatic software?
What if the .PDF acually an images (non editable pdf) ?
You need explain this matter to your potential buyer.
